The Balsamico of Casa Lovato is composed by cooked graped must, cooked cherry must (for the flavoured version) wine vinegar and cherry vinegar, obtained only from local raw materials.
During the grape harvest period, the lovato family collect the grapes form different selected wive variety.
The must went immediately pot-cooked on direct flames, avoiding the fermentation point.
During the winter it rest, and the process of pourring begin going gradually to smaller barrel, specifically crafter by the barrelmaster. The ageing phase took place in the crawl space of the balsameria.
In the taste can be found again the sweet and sour originally smelled and the sweet scent of mature red fruits, like cherry, raspberry and blackerry.
Raccomended for the haut cousine from the appetizer to main dishes,till de desserts.
